90th meeting. Risotto

Menu:
1) Risotto with lucky sun-dried tomatoes
2) White bean dip, also with sun-dried tomatoes

Discussion: undergraduate miscues, viking heritage in the Great Plains, Italian as a language, cleaning explosives and chemical-warfare agents

Risotto ingredients:
2 cups arborio rice
12 oz. crimini mushrooms, sliced
1 c dried shitake mushrooms, rehydrated
Enoki mushrooms for garnish
16 sundried tomatoes diced
1 cup of minced onion
2 garlic cloves, minced
3 cans vegetable broth + water from rehydrating mushrooms + additional water
1/2 cup white wine
Olive oil
Marmite
Thyme
Salt and pepper

White-bean dip ingredients:
1 14 oz. can of cannellini beans drained
8 sun-dried tomatoes, rehydrated
1-2 cloves garlic, chopped
1 teaspoon dried oregano
4 Tablespoons olive oil
2 Tablespoons balsamic vinegar
1/4 cup or more water
salt and pepper
Meyer lemon zest
